We have been trying different Vegetarian recipes this month for Veganuary (We couldn’t give up everything and go Vegan but we wanted to try not having meat). So when looking for different recipes I come across this recipe in our new recipe book. We have never tried Stuffed bell peppers so why not give it a go? Looking over the recipe I decided to change it slightly. So this is my CousCous Stuffed Bell Pepper Recipe. You can also change the recipe to suit you alittle more.

Ingredients:

  • 3 Bell Peppers.
  • 2 packets of Dried Instant Couscous.
  • 1 Red Medium Onion (diced).
  • 2 Carrots (diced).
  • 3 Tbsp of Canned Diced Tomatoes.
  • 3 Tbsp Sweetcorn.

Method:

Preheat the oven to 200’c.

Boil the kettle. Meanwhile, empty the couscous into bowls (if your only using 1 flavor don’t worry about separate bowls. I used different flavor couscous). Once the kettle is boiled pour over the correct amount of water and let sit for the designated time to cook.
