As most mummas, I kind of depend on snacks to get us through the day. I like them to be as healthy and good for him as they are a bargaining tool, stops meltdowns and even gives us 5 minutes much-needed break sometimes. They can be used a lot some days. However, I run out of healthy ideas of what to give Baby bear so I decided to make my own fruit snacks for him to change it up.

I found the recipe for these in the Eat Well For Less cookbook. I liked the recipe as I didn’t have to go out and get any ingredients for them. Win-win I could stay in my cozy clothes and not brush my hair and Baby bear gets healthy yummy snacks made with only fruit.

Ingredients:

  • 500g eating apples, cored, peeled and roughly chopped
  • Juice of half a lemon
  • 100g frozen raspberries, strawberries or blueberries (I used a frozen berry fruit mixture)
  • 3 tablespoons of water

Method:

Preheat your oven to 60’c and line a baking tray with baking paper.

    Don’t use tin foil – the fruit gets stuck and is a pain to peel off after it’s been cooked…(yes I did this)

Put all the apple in a medium-sized saucepan with the lemon juice and water and bring to boil. Then lower to a simmer and cook for 5 minutes until the apples are starting to soften enough to mash.

Remove from the heat and mash. Add the frozen fruit and place back on the heat for another 5 minutes, stirring occasionally. Cook until the frozen fruit has collapsed.

Once cooked, remove from the heat and leave to sit and cool for another 5 minutes, then put into a food processor/blender and blitz into a super fine puree.

Pour the puree into a sieve and hold over the baking tray. Press the fruit puree through the sieve with a spatula.

Feed the remaining pulp to Baby bear or throw it away whichever is more suitable.

Level out the puree on the tray with the spatula. Tap the baking tray on the side a couple of times to knock any air bubbles out then place in the oven for 4-5 hours.

              The mixture may shrink slightly and darken as it drys out. 

Once cooked remove from oven and set aside to cool completely before peeling off the baking paper and cutting into desired shape and size. Enjoy.
