I know I’m not the only mumma that likes healthy and tasty dinners that are also quick and easy to make. Even though I’m lucky enough to be a stay at home mumma once Baby bear has gone down for his afternoon nap (yes his 2 and a half and still naps during the day…A mumma does what she has to do around here) the afternoon seems to goes past so quick and it’s coming up to 5 before I know it. Poor timekeeping on my part really but what can you do?…

So here’s one of my go-to dinners that is reasonably healthy that I know both boys will enjoy. I also like the fact that I can change the flavors I use on the legs each time depending on what we are fancying that night.

Ingredients:

  • 4 Chickens legs (serves 2 people)
  • Sunflower Oil
  • Parsley
  • Basil
  • Thyme
  • Oregano
  • Spicy Paprika
  • Chilli Flakes
  • Garlic Granules
  • Salt&pepper

Method:

Preheat the oven to 200’c.

Place 2 legs into 2 different ovenproof dishes (only if you’re doing different coatings).

In a small bowl add 3 tbsp of oil. Add the chosen herbs (as much as you wish) and mix together.

Brush this over both sides of the chicken legs with the oil-herb mixture. Make sure you get all over the legs. Place back in the ovenproof dish skin side up.

Place in the middle of the oven for 45 minutes. Turn over halfway through cooking time and again 5 minutes before the end of cooking time to crisp up the skin.

I liked to cut all the chicken off the bones. I serve mine on top CousCous with the chicken roughly chopped. It doesn’t look the most presentable but it tastes so good.

Be Warned: If you give a toddler couscous it will get everywhere and you will be finding it for days… It is like edible glitter.
